mix up dashi, mirin & sho-yu and you got agedashi tofu
meanwhile, falafel. In egypt, they were amazing. They used green fava beans. Is there anywhere in London which does them with green fava? They're far better than the dry brown grainy stuff I have seen around.

This involves gluten flour / "vital wheat gluten" (for people in the USA).
You have to like the kind of 'chewyness', some love it some hate it.Other than that you can basically make vegetarian / vegan burgers out of anything.
Obviously, you will not be making something tasting like meat!
If you want to taste animal, eat animal.
If you're okay with eating something else that is fucking delicious, learn to cook another way.Using beans or rice for example as a base, add vegetables and suitable herbs,
and figure out a way to hold that stuff in form of a patty, that's basically the trick with veg burgers.There's a veg/vegan "fast food restaurant" here in Berlin that does superb seitan burgers (they look like a Schnitzel).
I have to ask them how they do them, so far I suck at making good seitan things. -

The majority of people eat meat, and a lot of people don't consider something a meal unless it contains meat. Otherwise what's the point? So it's not surprising that there will be a lot of meat talk.
I agree that food is far more than just meat. But meat is part of food and something that a lot of people enjoy cooking because of the many variations in cooking methods and the differing textures and flavours you can achieve. Also a lot of the more "trendy" cooking methods are becoming more accessible. How many people have a food thermometer nowadays? How many people have tried cooking sous vide at home?
And what you said about knowing where your meat comes from, I agree. However for a lot of people that sort of meat isn't affordable or obtainable.
Plus without meat where do you get your protein from?

I like burgers. But come on, there is a lot more on the food world. A lot more that is less fashion driven too. Three years ago, burgers wrought have had a mention in a thread like this.

Just read the new Cheese & Biscuits review and it's got me thinking about the big round deep trays of moist, turbo-charged rotisserie chicken and thick coins of soft potato cooked in the chicken juice I had in Spain, absolutely stunning
