  • I've signed up, I'm local and recon I could manage 10 x burgers

  • Speaking of burgers, found a new butcher near me in Taplow. Got him to mix me up some short rib, flank and marrow rough cut mince on the spot. Sooo much fat, they were an absolute treat...

    Interesting. I've tried a sirloin, brisket and oxtail mixture before that was delish!

  • I stand by my challenge winning mix...

    50% Sirloin, 25% Chuck, 25% Brisket (500g, 250g, 250g) and 100g smoked bacon fat - Ginger Pig. Course grind.

    Apparently the next challenge is a vegetarian tart, with 3 major ingredients (minus the pastry and egg etc).
    Was thinking Peas, Asparagus & ?

    Had an idea of individually injecting each pea with a bit of butter.

    Could be nice with some balsamic glaze too....

    Trios are good fun mands. You could try going fusion. The buttery tart pastry approximates naan or paratha bread. So you could do a paratha pasty tart with spiced aubergines, okra and lentils.

    Just an idea....

    I tried spherification once at home and its pretty fun/hard - Pea is one of the best ingredients to do this with, you could make a really fresh pea soup/liquid and spherify them and serve on top, so they keep all of that flavour...

  • Got involved in this (Spit & Roast) last night at the fan park. Had a chicken burger.... damn it was GOOD. The chicken was super moist and the marinade / seasoning was superb.

    Not sure if anyones mentioned it, apologies if this has been covered elsewhere - Tour de France fan park starts next Monday at Wood Wharf, 5 mins walk from Canary Wharf station. Should be excellent spot for watching outdoors on a pretty jumbo screen and you have the added delights of sampling cracking grub such as Buttermilk fried chicken from my van, Spit & Roast. Bleeker Burger there too who are ridiculously good, Zan took her inspiration from Shake Shack and ran with it. Discounts of course to any forum peeps, ask for Ross.
