Heh, fair enough. I suppose a saute pan is more useful, but I've never had one. I have a lecreuset with a lid if I need something that goes on the hob and in oven.

cast iron is dead easy to maintain if it's good stuff. Just rinse + brush with hot water after cooking. If it's done straight away it takes 30secs tops even if there's stuff sticking to it
(Just inherited girlfriends grandmothers 40 year old cast iron pans – humbling)

In theory you're completely right but when I'm hungover/drunk/tired I do it wrong.
I don't even use it any more, do everything in a little lecreuset pot which isn't ideal for everything because it's bloody tiny.I want something that involves zero upkeep, hence stainless steel. Happy to forgo the non-stick properties of cast iron.

Ditching my far too heavy, annoying to maintain cast iron pan and am changing to a stainless steel number. My girlfriend uses stainless steel pan and I much prefer cooking in it.
What's better to go for, saute pan for normal frying pan?
I only need one pan and I'm kind of figuring that a saute pan might have slightly more uses than a frying pan.[ame="http://www.amazon.co.uk/De-Buyer-5610-28-Mineral-Element/dp/B00462QP16/ref=sr_1_3?ie=UTF8&qid=1354560008&sr=8-3"]De Buyer 5610.28 Mineral B Element Round Frying Pan, 28 cm: Amazon.co.uk: Kitchen & Home[/ame]

Lions is pretty toxic

can be awkward to get a spatula under things in a saute pan, the angled side of frying pan is more practical. neoflam are my preferred frying pan manufacturer, FWIW.
you could look at an enamel coated cast iron skillet ... doesn't have the same maintenance requirements as plain cast iron, has a shape that can be used as a frying pan easily enough, and you can saute in it. -

tefal (teflon) isn't toxic afaik, that's just a widespread rumour.

I'd need to buy a staff as well and can't quite stretch to that at the moment.
I might buy a very snazzy Mauviel pan if my boss decides to do a Christmas bonus.

I'm in love with Neil's yard, in fact I was in there only last week.
It's massive. It's more of a huge cast iron wok.
I cook in it, wash it, leave it drying. Forget you're not allowed to wash it with soap or leave it drying. Then add a bit of oil to it afterwards.
Fuck that. I was want something that isn't gonna rust or cry when I don't treat it right.
