Banana bread - I used strong flour in the absence of plain, overworked it, and the mix was too wet.

Honey and maple syrup glaze was a pure win touch on my part.

Result - It took a day and a half to eat both loaves.

Nom nom nom nommmmmm.

I get too wet a mix when I add too many bananas.

I normally buy a small bunch and intend to eat one or two and cook with the rest - but I invariably forget and just throw the whole bunch in to the mix.

Dense, heavy cakes. Still good toasted and smeared with butter - but not very sponge like.

I just made a Banana&Walnut cake.

I too have made banana loaf this week- wholemeal- with sultanas and shaved almond.
Also fruit scones and poppy seed bagels.
They were all good.
