Can someone point me to it again please? I thought it was somany grams per litre, bloom for 30 seconds, throw some more water on the grounds, done.

Heh. Nice method but his explanation of the chemistry of bubbles forming during wetting of grounds is dubious... CO2 released? Surely its not simply the air pockets between grounds being displaced and forced to the surface of the liquid...

I was under the impression that's proven and not just an assumption? I thought that's why you'll see many more bubbles during the bloom with freshly roasted coffee, because there's more CO2 to still be released than older coffee, where there is less.
Same reason freshly roasted coffee can almost be slightly fizzy right @StevePeel?
Edit: Or is this another of the brewing myths that's been repeated so many times it's become an accepted pseudoscience?

Haha so am I! So I'm curious if it's not actually true. I've definitely read it many times and been told it at cuppings etc but I'm also aware that a lot of opinions are often spoken as fact too.

This. My wife uses the stuff with coffee, by the gallon I think judging by the number of empties I find here & there. I think the blurb on the boxes is extra abrasive on my brain because I know it's all made up by some dorky Swede(s) who thinks they're really cool and good at English.

they finally make it to a 3rd-wave coffee shop which serves a decent looking coffee and they even say "wow this is a great coffee" only to go on to complain it wasn't hot enough

I've been told that is often down to the shop just not being busy enough - machine doesn't get enough use to be properly hot.

Nah it'll be because coffee people prefer milk at <55C but customers often want >70C. Also less-experienced staff won’t be as good at hitting the temps consistently, and people will complain about too cold but rarely about too hot.

Machines are either on, or off. If it's really busy they might run out of steam pressure. Not the other way around.

Never had that happen in my experience. As mentioned above, it's possible for steam pressure to drop with too much use in a short period of time. But I can't see how a machine would lose temperature through lack of use.

I'm obviously no expert, just repeating what I was told based on my relating the experience of receiving cold coffees at places where the machines were clearly not constantly in use.
Any ideas on alternative reasons for this? It's happened to me often enough. -

What are the cheapest beans you're willing to pay for? Bonus points if I can get them off the internet in decent quantities or in a supermarket. I'll have no income in a few months and want to a) save money now and b) figure out which cheap coffee I like most. At the moment I'm drinking the Lidl beans.
