What wheels are on the neutral service car? A well thought out pro build should consider that, or you could accidentally end up underweight at the finish.

Easy way of making sure that you're not caught out that way would be to ensure that your race wheels are lighter than the possible replacements, no?

Yes, they are usually Mavic, probably Ksyriums
You might want to start on a wheel which is faster than a Ksyrium (nearly all wheels are) even if it's several hundred grams a pair heavier than Ksyriums.Obviously the scenario of finishing on a wheel from neutral service is rare, but it's also a scenario which is likely to involve your being highly placed at the finish too. You don't really want to be disqualified for an underweight bike after scraping home second in PR despite a late puncture.

Ksyrium ES's are ~1,500g, boggo Ksyriums are 200g more.

Look more like bog standard Aksiums on the bike Jens is using, prob similar for spare wheels ?

Ksyrium SLS tubular is 1385g claimed, WH-9000-C50-TU on that BMC is 1449g claimed. Or taking a 9000-C35 from your own team at 1362g, for example. None of them sufficient to get you underweight, but the kind of thing you have to consider.

I love the way the Mavic bikes have clips and straps to overcome pedal system compatibility issues.
