Travel isn't that vast in the greater scheme of things (6")

Either through steerer (front brake), super long cables or many run just one (rear) brake.

But if you have one rear brake and attach the lever to the bars then surely it wraps around the top of the forks?

It would wrap round once (if you're tail whipping), but because it's long enough, it's a non-issue.

For example, in this photo the rear brake cable goes nowhere near the fork crown and the gear cable also has enough slack to be wrapped around.
