took the tout terrain off my list as I don't think it's that useful a touring bike compared to the Thorn Sherpa, the best advantage is the integrated rack which kept the weight down and prevent too much flex under load.

Snow, especially wet snow, can jam up full mudguards. I've removed mine for winter, and will put a similar set-up to that, on when I get around to it. Just need to dig them out.
Clipless in the snow is a matter of taste. I like to be clipped in.

I went clipless during our snowy winter. If you've got mtb shoes then you can easily ride with your shoes unclipped for the sketchy bits. But I can see the good reasons against it too.

You need to clear your cleats regularly, and be prepared to not be able to clip-in. I froze some quattro cleats to some eggbeater pedals a few years back. Still gives me a heart flutter, each time I have slight unclipping delays.
Getting Mallets for the Fatbike. As I have candys on the commuter and fancey a little more platform.
