  • Baaah. I asked about Horl months ago, y’all said it was a gimmick and I should get a Lansky.

    Got an AliExpress version and I’ve never used it cause I can’t be bothered fiddling with the set up.

  • From the description it is a gimmick and you probably wouldn't use it much either, saved quite a bit of money there that you can spend on nice knives.

    I'll be visiting Japan in September and want to bring myself at least one kitchen knife (santoku/bunka/gyuto and maybe a nakiri, in the range of 250€) from a traditional knife maker. Did any of you do something similar and can give me a few tips? I'm very uneducated (in this topic, but also in general) right now, so I'd be happy for any info regarding where, who, what, etc. Thanks!

  • The yen is at the moment fairly weak against the pound, so you can get a good deal.
    If you’re going to Kyoto then I’d look to buy one from Shigeharu knives - the guy doesn’t speak much English but is a traditional knife maker. I now have two of his knives after visits to Japan.

    If you’ll be in Tokyo then Kappabashi will probably be your best bet or certainly a good starting point. Kamata and Kama-asa are my two favourites. Though most stores will be happy to talk you through what knives they have.

    There are tons of posts on this in the Reddit /chefknives or other similar. Personally I found this a really useful source of info.

  • It could have been "pro cook" store , they did an unbelievable deal that was like they had 3m units to shift before Christmas, but it went on for ages. For no good reason I use russums (will edit) online

  • I’d like a knife for fishing, having lost my dads old one. Any recommendations for something brightly coloured (pink, orange etc), folding, locking (or pretty stiff when open) and that has very little “tactical” vibes? Ideally <£40
