I'm interested, would it be wiser to bring a gravel bike or an xc mtb?

Either bike will be perfectly capable. I'd choose the XC bike, as you'll probably enjoy that more for the fun bits :-)

Agree with @BareNecessities XC bike will be more fun. Gravel bike will certainly get you round though.
