Lego have a Creator 3in1 theme, currently with 28 sets, where each set has instructions for 3 things.
https://www.lego.com/en-gb/themes/creator-3-in-1
They don't have the detail of the bigger and more expensive models that Lego are mostly targeting at adults but they are great sets.

I quite liked the 3in1 shark set I got recently, so I got another one to have multiple sea creatures!

Also this set is £17.50 in Morrisons at the moment, which is decent over retail https://www.johnlewis.com/lego-classic-11002-basic-brick-set/p3910280?

By 'one-off' I meant that people who don't normally buy LEGO buy something as a one-off to display somewhere. It's one aspect of how LEGO has expanded its appeal into model-making, i.e. where people might have done a Revell kit in the past and put that somewhere, now they can do the same with LEGO.

last time I saw multiple build instructions was the first lego Technic car.
As well as Creator 3-in-1, many recent Technic sets have B model instructions either in the box or available to download

Multiple build options have always been a LEGO feature. Many old sets had them without being branded '3 in 1' or '2 in 1'.
-

old sets had them
Mr Sworld was suggesting that this had changed, and that no recent sets had multiple build instructions.

Ah, sorry, I missed that that's what he meant.

I always love the look of these collector kits, but for 750 beer tokens I'd want it to be able to contribute to invading a small planet, not just sitting on the shelf...

It'd pass for a Metro 6R4.

Metro 6R4.
I for one would welcome a full suite of Group B cars in the Speed Champions range, and I'm sure they're more on-brand for the AFOL demographic than the cookie-cutter modern Lambo/McLaren/Koenigsegg stuff they're doing at the moment.

They had an AT-AT kit from the Last Jedi that was very disappointing.
This UCS version looks fab and makes me want to sneak out of work early and go to the Lego store. -

Lots of really good deals in some the Black Friday sales, Argos and Amazon in particular. Picked up another couple of city scapes and a few more speed champions too.

John Lewis have the UCS Star Destroyer and Millenium Falcon at £520 and £550 respectively. Both absolute bargains, obviously.
I'd take advantage if I had space for either of the damn things when finished.

Group B
File name is a give-away
(ETA: Technically, Integrale is the basis car for the later group A racers, the Group B car is a Delta S4)

All Lego recently has been a one off, that's how they sell them.
The last time I saw multiple build instructions was the first lego Technic car.
Yeah. That is the gap between kid stuff and new stuff.
