  • Not sure what’s the knife called something to do with sailing though. I have a niwaki hori hori knife that I use much more than I thought I would in the garden. Weeding planting etc

  • Yeah that’s nice, good find.

    Also a fan of the hori hori although I mistreat mine. Does annoy me a little that the tang doesn’t sit flush with the scales, not that comfy after a while.

  • I was tempted to try and carve some wood to fill the gaps. We've taped the handle with fabric tape as a stop-gap, seems to have done the job

  • Have to make a confession, I quite fancy a hori hori, the same as I fancy an opinel mushroom knife, but know it would never be used. I looked at a hori hori cheapy knock off in B&Q and thought maybe. But then it would be used either. At least with a hori hori, I know it is there never to be used.

    Its 74mm high, and 2.6mm thick.

    Or should I go for the 225mm one for a little bit more? 110mm high, and 2mm thick. almost twice as heavy though.

    I now have a Zwilling cleaver, Victorinox cleaver, cheap chinese shop cleaver, and am now wanting one with a bit more class. The one pictured above is probably a bit too small.

    Having got used to the bench scraper use of the cleaver, using other knives seems messy and impractical!

  • then you probably want the thinner one but it also depends on the shape of the grind. It's Japanese
    so probably good anyway.

  • Fuck knows how but I seem to have lost all but one of our crappy Ikea kitchen knives. Just ordered a set of three Opinels. Chef's knife, carving and paring for £60. Should be okay quality right?

  • Need a strop. Does this look ok? I’ll probably only use it on my nakiri. I do have some leather knocking around. Can I just glue it to a bit of wood?

  • Yep, just glue leather to some wood or to the counter top if appropriate.

    You've reminded me that I have a load of leather off cuts from an aborted wallet making idea.

    I will make a nice solid strop for kitchen knives.

  • I made one with an old, thick, leather belt glued to an oak off-cut. Contact adhesive works best: thin coat on both surfaces, leave to tack-dry and then apply pressure.

  • Physical pressure? Or did you just make it clear that if it didn’t stick it would be thrown out?
