Bar wrap direction is personal preference. Depending on which way you twist when you climb it can be right or wrong for you.

the drops are the same direction but I always seem to get confused at the hoods so I have one side going one way and the other side the other, I somehow manage this about 75% of the times I wrap bars

Is it possible to fit a 15mm thruaxle hub on a 12mm Surly midnight special fork?

That sounds doable. Would they need to be specific to the hub? I’m thinking SON or SP dynamo. Can’t see 15 to 12 end caps made by them.
To clarify, I think I may need to switch between carbon and steel forks for touring, so would like one hub to fit 15mm carbon and 12mm steel forks.

As far as I know neither SON nor SP do 15mm to 12mm end caps for conversion only a QR converter. There is a Taiwanese company making a dynamo hub that looks identical to the SP that can be converted but I forget the name, check the cycling about.com article about dynamo hubs. Also why not just go for a 12mm axle carbon fork?
Edit: The dynamo hub is made by K-T although there doesn’t seem to be many reviews out there yet.
