Poultry shears are the correct answer. The Oxo ones are brilliant.

I still don't have a decent pair, easy to find recommendations please... I bought some Jamie Oliver kitchen scissors when we arrived in Oz, I was desperate, they are next to fucking useless and I need an upgrade super bad...
Not easy things to find!

Easily found on a very popular e-commerce web site. I have these two in my kitchen.

The Kitchen and Herb scissors in particular are very useful for pretty much everything. They pull apart (as do the poultry ones) for hand washing or sticking into the dishwasher which is really handy. I think I've had those for 4 years or so and both remain very sharp.

Epic dredge... did you make the Velo pine handled knife mentioned here?
I have some used & new velo pine offcuts, plus a fair bit of Cherry... a mate suggested making DIY knife handles from some of it.

Not really.
I tried but my whittling skills were non existant plus it didn't really seem like a very nice wood to work with, kinda splintery and dry.

Useful to know... Might try something with cherry but starting from zero whittling skills here too.

I think I'd like to buy a knife a a gift for my best man. If you were my best man would you prefer a kitchen or pocket knife? I know that he hasn't got a decent kitchen knife, but a pocket knife seems more sentimental.

Can I be your best man?

I'm not entirely sure he would carry a pen knife either.

I'd agree with pocket knife unless he's a really keen cook. If he drinks I'd be tempted to go with something like this (adjusted for whatever budget). A lot of people still wouldn't carry a legal carry knife whereas this is a bit more functional and draws away from the "weapon" element a bit:

Now that is a better idea. IMO.
Or look at the cheaper cork screw penknife from opinel

I got 5 engraved Opinel No 8s for my best man/ushers. Went for different woods from their 'luxury' range, very nice to handle.

Very nice... I went out to treat myself to a new knife today but didn't find anything I liked, probably just as well... 🤪
Pretty sure a nakiri is primarily a veg chopper anyway non?
After getting way too deep into Japanese knives and making some choice purchases a few years ago, barring catastrophic damage or loss I don’t think I’ll ever need more knives which is weird. Like TS I just obsess about other crap now...
