They'll come with the olive/barb kit that you'll use to attach the hose to the lever after you've cut it to desired length.
I think that J-Kit holds the olive in the lever so you don't have to worry about losing it.

Not really, the lever will have mineral oil in it, so will the hose and caliper. Just be careful not to squeeze it out and it'll be fine.
