At the end he turns it in the opposite direction so should engage, not coast but it stays disconnected. Wouldn't want to be in a situation where you suddenly start cranking the pedals and the cranks spin and you don't go anywhere

Nah, it's like a freecoaster. It's only when the freehub turns on the axle it engages, so it'll freewheel backwards too.

Try and get 10s xt shifter and mech. I've had the same m785 shifter and shadow+ rear mech for years and they're flawless

Sadly not. Cassette needed also. And slim flat pedals. All set after that. I think.
Not been looking much but been watching a few GX 11 speed bits on eBay. Nothing yet though

There's such a thing as an 11-speed flat bar Apex shifter which works with Exact Actuation derailleur e.g. ^ that. The shifter is £18 new but the 10-speed derailleurs are cheaper (than 11-speed) and work with your road stuff.

How much? What cog size will that fit over?

£35, and definitely 42+
