Even quite worn chainrings don't normally throw a chain though but it could happen.
You looked at the derailler adjustment? Chainring bent or loose? BB movement?

Bike came with 105, I tried to get on with it but the lever moving sideways when I’m braking doesn’t fill me with confidence and the shifting is so much less snappy and sharp than my other Sram bikes

Yeah, or a new chain on a worn cassette or some other not-quite-matching combo. If the indexing is slightly off it can happen too, so if it's "almost" about ready to change but didn't quite get into the next gear and you flex/whip the chain enough that it jumps to where it should've changed to earlier.

Obviously that's lies*.
The lever only moves sideways if you move it sideways so stop moving it sideways :P*no idea i only use Ultegra and DA shifters and 105 weary outty bits

Good and bad. At first I thought the same and was enjoying being able to shift while using the front brake instead of having to only use the rear while I shift before using the front brake.
However after getting used to it I found myself braking later and shifting in the corners. Picking up bad habits in 24 hours haha -

I don’t trust the cassette and chain any more
after I came off my first fixed gear when some twat ran out of london bridge and straight into me in the middle of the road there was some sponginess to the right pedal on the remaining ride to work and on the way home. ordered a new chainset and took it round @Stonehedge gaff to use his tools to replace it. when we flipped it over the entire bottom bracket shell was being held to the rear triangle and seatpost by about 2cm of metal which was acting like a very fragile form of suspension for the entire bike when i pressed down on the pedal.
I always check my whole bike after I come off now not just the bit i think is broken.

Currently commuting to Oxford from SE London on a poxy train, do trains every run on time. I apologise to the decent cycling folk of Oxford but the rest can go and fu*k right off. I thought some of the capitals cyclist were bad but these Oxfords bods are in a different league. When you have to jump into the road to avoid the on coming pavement cyclist.

Crash, sue council for poorly maintained road. New bike. Win.
Maybe. Earlier on the same ride home it had slipped for a half turn which made me whack my knee but didn’t come off or anything. Had a look but couldn’t see what had happened. Chain was still in place everywhere it should have been.
I’m just going to swap out the lot, I don’t like Shimano anyway but I don’t trust the cassette and chain any more
