Did you open up the piston before fitting new pads?
Sound like that the piston have auto adjust for the wear of the old pads, that when fitting new pads, it end up being too tight.
Put old pads back on, pry it open as much as possible, then fit new pads in.

Shimano equivalents usually reccommended. Spyre ones wear pretty fast

I have had to make the cable taut twice now to make the brake when pulling not spongy - sign of worn pads? My friend assures me I have plenty of pad left....
