Got a Ritchey logic myself and after my old viner its the comfiest bike i have had. Maybe the pacenti sl23 with 25 mm tyres help but you could defo get a 28 through the forks but not on a hed belgium plus or similar.

Are nowadays aero wheels only made in carbon? Any new options in aluminium?
It cost me some time to find my HSonPlus
SL42 and seems like they are the
deepest aluminium rims available, I hope I'm wrong! because I really don't
like carbon components on my bikes.

They're deep but hardly aero compared to the carbon model.
If you don't want carbon, go for the carbon/alu one like the Zipp 60.

I'm looking for zero carbon rims/wheels with good aerodynamics
It's quite likely that there's not a more aerodynamically efficient metal wheel than the Zipp 101. There are still a few new ones about. I imagine that Zipp discontinued them because they were expensive and hardly anybody has your visceral attachment to metal rims.

As long it's Shimano, yes.
(if it's an 11 speed hubs, need a spacer that should come with it).
