I think when it says nachgewogen it means they have weighed them themselves. Although its probably without skewers.
On second look though the rim (Kinlin xr 200) aren't very wide so not really comparable with the other wheels.

Depends on the terrain - if it's all a bit pointy then the heat caused by braking repeatedly from high speeds can pop latex inner tubes, apparently - I've never seen it personally, and I've descended on tubs with latex inners in the Alps and other mountain ranges.

Ask your rim/wheel manufacturer/seller. AFAIK the answer is going to be no. You'd be OK on the track and most flat TTs.

Tyre recommendations for wide rims? Used tips from a couple pages ago to get 25mm open corsas on to my new arc22 rims yesterday. They did go on but I don't fancy that fight on the side of the road with half a club looking at me.
They do look badass though. Come out at 27.5mm and have plenty of clearance on new synapse frame, enough for sks guards which surprised me

The loud noise of Hope hubs stops if/when you regrease them.

Go for the widest you can go.
The tyres will stretch a bit making it easier to mount/remount when necessary.
I very rarely get punctured on the Grand Bois 42mm despite having no puncture resistance for the last 3+ years.
Ditto on Compass 38mm.
