25mm on wide rims is plentiful, I wouldn't worry about that really.

I've fitted famously tricky Veloflex to my arc31 rims and that was quite an operation. Really just a fluke the fragile tubes didn't get damaged.
FWIW the 23mm tyre sits nicely matching exactly the rim width at 24mm. The rear is 25mm and measures just that.

What sort of pressures are the wide rim/tyre runners on here riding? New to the game and currently setting front and rear at 90psi for arc22 rims with 25mm tyres. Interested to hear what others are using

100 rear, 95 front on wide 18mm internal, 25c tire, 82kg.

18mm internal width.
75psi rear, and 65psi front (25mm).
75-80kg.
YMMV.

I'm going to fit my mudguards and if there's still a bit of clearance I'm tempted by 26mm gravel kings. If there's no more room I might have to stick with the 25s and hope they stretch like you mentioned
