I whittled this a few years ago. It was from an old table leg I picked up from an east end furniture maker, and is a type of Rosewood. Delightful to carve but it took weeks. I did it all with a little pocket knife. I was a courier at the time and carried it in my bag so I had something to do between jobs. I ended up praying for quiet days so I could get on with it.

Here’s today’s entry
I’m enjoying butter knives. Going to have a go at a steak knife with serrated blade

Ahhh!
Shame, I was whittling a tea pot (solid not hollow), and mine splintered too. Gutted.
Will try again with some more suitable wood next time i go for a wander around the local woodland.

You should do a spoon with a handle like that.

Ha, thanks. I suspect the spiral is easier than it looks. Just got the knife, came really sharp so I'm sure that helped.

Just found these in a box, not seen them for a while :)

It’s very pretty. But just by the name I know it’s out of my price range

I guess it's not exactly inexpensive, but not luxury item prices either, 75-85 EUR depending on the version (the stated intent mentioned in the Finnish text is something like "mass-production of hand-made knives"). The blades also might not be exclusive to him, Laurin Metalli blades are sold separately and at least one web shop mentions that PT series (priced around 20 EUR) are dual-hardness. I'm hardly an expert, but the proportions of the blade feel spot on.

Also, if you don't mind a bit of DIY, check out https://www.brisa.fi/
The Enzo kits are ace.
Bought one, built it, loved it, lost it, bought another, built another, kept that. -

They look like excellent value for money. Only minor problem the gouge I want is out of stock. I’m a leftie
As @rhb says using a gouge like this https://www.rutlands.co.uk/sp+hand-tools-carving-tools-japanese-carving-tools-japanese-carving-tools-japanese-wood-carving-tools-asamaru-rutlands+m_jp1164
