I still don't really understand how disc rotors can apparently do this when chainrings seem much more deadly and never cause any problems.

You have to get past the wheels before you get caught on a chainring. Discs are out front and sharper than a chainring and they get hot too...
All that being said disc brake injuries aren't terribly common in mountain biking...

Have you ever touched a chainring or disc rotor? But there is always the cassette which has 11 really sharp "discs" with anywhere from 11 to 32 blades on them.
11 speed cassettes are dead

This is barely a scratch. In all seriousness, how could UCI get on board with carbon components (mostly frames, forks, handlebars) if safety is so important?
