This is what I'm currently using, but both my track pump and my mini pump have thread on heads, and screwing in the valve stems into the extenders doesn't leave enough thread for the pump heads to stay on...
This otherwise minor annoyance caused me a rather expensive cab ride today and I do not wish to repeat that trip

I've not seen any. I mostly use Topeak valve extenders.
Swap the head on your track pump.

If I were to put 25/28 latex tubes in a 38/42 tyre will I instantly die?
I run 26" butyl tubes in 29er tyres, and that works fine.

No, but I'd imagine you'll go through tubes like nobody's business - I've used undersized butyl tubes (700c) as emergency fixes when I've had the wrong ones with me, and have had them tear. Latex is even more fragile, no?

I've used Michelin Vittoria and challenge over the years. I reckon Michelin are better but there's not much in it. I've heard vredestein are supposed to be good but never seen them for sale at the usual places.

I guess you've checked the rim and tyre to make sure there's nothing there that shouldn't be rubbing on the tube ? Otherwise dodgy batch of tubes ?
I'm a convert to latex tubes with a supple clincher having ridden on them since April. Doubt I could tell the difference between them and a good tub in a blind test
