A 11spd shifter will move your 10spd mech correctly (but the right amount for a 11spd cassette), so you'll need a 11spd cassette too as well as the shifter. Mech is fine.

I don't ever recall going through much more than pads in an average winter riding MTBs providing I cleaned it properly and that was riding a couple of times a week in the slop in the UK.

No - an 11 speed shifter expects a 1.4 pull ratio rear mech. A 105 10 speed mech has a 1.7 pull ratio. It'll move too far.

Buy whichever derailleur the cheapest (4700, 5800, R7000 etc.).
(4700 have the same cable pull as 11 speed mean you can fit 105 GX derailleur on Tiagra 4700 shifter).

The ugly RS505 hydro STIs are selling for buttons on eBay these days. If you're used to proper hydro you'll hate anything less.
