i have run the 2" g-one speeds and i really do not recommend them. they have this self-steering effect in tight corners that i've not experienced with any other similar tires (including other schwalbes). jan/ryan also reported the same thing to me. lost some skin over it.

Your left foot will be 3mm outboard compared with your right foot. Shimano road Q factor is 146mm, GRX is 151mm.
That doesn't necessarily mean that the left hand crank has a different distance from inside to the outside faces though. The Ultegra FC-6703 crankset has a bigger Q factor by 9mm than the FC-6700 but the left hand crank is exactly the same. Are there any spacers between the BB and the NDS crank arm on the GRX crankset?

I'll avoid, thanks. I am more interested in the Bite / Ultrabite options for rougher 'non 25mm road bike tyres' gravel. MTB but maxed at 2" tyres.

not sure if it is specific to the tread. ryan seemed to think it was casing/tread wrap related, which makes me think it'd be a problem on the bite/ultrabite too. it is lame that there is such a paucity of 2" tires. idk about the measured width exactly but for 650b the thunderburt definitely didn't have that problem, nor did the 29x2 furious fred. that said maybe with side knobs you are already squirmy enough in paved corners that this isn't a bother. i did a few rides/races on the speeds and when i was on dirt it wasn't really a problem.

There's a lot of variables - pressure, volume, tread wrap, side knobs or 'smooth' profile, where the side knobs exit, what rim it's on and how that changes shape, yada yada. It could be argued that a faster tyre means you're going faster for any given piece of road/track and so you might have more losses of control - ie. not a bad tyre just you were moving faster than otherwise? I dunno, this whole dirt grip thing is a mystery. I'm trying hard not to crash so probably super conservative but even then I'm losing traction cornering sometimes, but then unilke someone used to it I'm probably tensing up to fuck and making it worse whereas MTBers would just deal with it and ride it out without any butt puckering.

I agree but with some reservations. Gravel tours with support vehicles in tow.. I'm not sure I like the idea of coming face to face with an Ineos Grenadier or quad bike following a load of people along some remote doubletrack. Defeats the object of the exercise (for me). Could also just be old fashioned snobbery I guess.

I used to ride in actual gravel tracks all time back in Spain. You cross with a car or some farm vehicle sometimes. These roads are usually too bumpy to go fast anyways, it's not like you'll get the usual close pass at 50mph.
