Well, I am currently using a 90mm stem. I would use then a 100mm stem on a 55 or 56cm seattube.
Big issue I have with my second bike, the Moser, is that it is 57cm (which should be just right), but it has a 120mm stem! :(

I'm running a 120 mm stem on my 55 cm square bike, and it's about right, if a little tight. Ideally I'd want 56 square with a 100 mm stem I think, because I've got a bit too much stem exposed above the head-tube.
Which is why I think this bike would be too small for you, going on the pictures of your Moser - not tall enough?

I am about 177-180cm tall. The Holdsworth at 58cm seat tube is a bit tall (standover height at 85cm and I can jump down the saddle, but need to be careful :) ).
As said I have a 90mm stem on a 58cm toptube and I feel it is too long.
So a 57 with a 100mm should have more or less same problem. That's why I think 56cm with 100mm stem should be right. -

I've had exactly the same issues! I used to ride 57cm and never really felt comfortable. The older I get the smaller the frames, I moved down to a 56cm with 90mm stem, and now I ride almost exclusively 55cm with 100mm.
Plus smaller frames = lighter bikes ;)

I think 57 is my size now that I tried the F.Moser for a longer ride.
Still its 120mm stem is too long. -

Maybe you'll have to invest in a new, shorter stem?

I think you're underestimating the jump down from 58 to 55 cm.
