I'm running mine fixed at the moment and loving it. I leave the brifters and double chainring on and switch it between 6 months fixed for winter and 6 months geared for touring in summer.
The ability to run either set up is what drew me to the frame. All I do is remove the gear cables and derailleurs and switch rear wheels and I get a whole new bike to play with in winter.

I really enjoy my CC, also in fixed gear mode. Has mudgaurds and different pedals now but otherwise has been perfect for the commute and towpath!

Thinking of something sturdier.. might do a bespoke mount, running a bracket between fork crown and mid fork mount, with different holes to fit either anything cages or water bottle cages

Salsa Anything cages plus camping flasks. You're not gonna grab them while riding so they don't need to be normal bike bottles. Use the boss at the top of the fork and a strap at the bottom of the "cage".

That's more or less what I had in mind, but probably using the one at midfork rather than the one at the fork head
Or even lower, having a bracket between the mid fork one and the eyelet at the stays

Depends how much weight you attach to them, how rough the ride etc, but 3 would be ideal.
Is the distance between the top and mid-fork bosses right to do each end of the anything cage?

Not sure if they are compatible to other cages than Gorilla, ie distance between mounting points.

I don't think so, the Salsa anything has 3 bolts spaced to suit standard bottle cages mounts, which is typically 64mm, hence 128mm. The distance between top and mid one is more than that for sure
