Carbon steerer tube but no spacer above the stem, handlebar tape facing forwards on the tops... Those are pretty rookie mistakes, no? Always surprises me with these kinds of videos.

Not all carbon fork/stem combinations require spacers above the stem.

Taping it's exactly how I'd do it, and I tape a lot of bikes. As for the steerer, all new bikes are designed like that.

I agree on the bar tape. I presume the steerer is a showroom set-up to be finished to fit a customer.

Barely an issue. What is an issue is Snipping hoses with those side cutters.
Also...use some fucking gloves, DOT is nasty stuff, followed by a blast of alcohol...then more grease. No idea what it is with mechanics and crusty hands.
Also, is grease on ration? Considering that fuck all sealing there is on bearing points these days, pack some more in there.

What's the explanation for the steerer having to poke out of the stem again? I've read it somewhere here (probably in @gbj_tester thread) but I can't find it anymore.
As for the bar tape I would also tape it the other way round but Mash says I've been doing it wrong

I presume your stem caps remove the need for a spacer, as they incorporate a 2.5mm one of their own? As long as the steerer is cut precisely to length of course

Yes, that's the whole point, but of course I also do diameter-matched spacers for people who want to leave themselves more wiggle room for later adjustments.

Thanks! But wouldn't it be sufficient if the steerer is longer than the uppest screw that clamps the stem (red line)?

No, the barrel of the steerer clamp has some rigidity so the part above the top screw (and below the bottom screw) is still applying some compression to the steerer. You'd have to do some FEA to see exactly what shape it assumes, but that's not even the point. If the peak compression on the steerer is in line with the screws and the bit just north of the screw has no extension, then it is also the least stiff bit of steerer so it adopts the conical shape described. The radial compression is the same for the top and bottom screws, assuming the same tightening conditions, but the steerer compresses less at the bottom screw position because it has practically infinite extension either side of the peak loading. If you want to visualise, think of the lower screw creating a waist and the upper screw creating a neck
