You should be fine, especially at this time of year when it's dry a lot of the time.
The quality of the white roads is variable but, generally, good enough for a road bike with standard 25 mm tyres to cope with them. One thing to watch, they can be very steep so keep an eye out for elevation changes on the maps.

cool thanks - will take plenty of inner tubes just incase, just don't want to shred a tyre.

Casstellini is great - a big centre for Chianti production.
Download the L'eroica routes, as they are in the area.
Castellini - Radda - Gaolie would be a fairly easy ride to help you get to know the area.
Went to Ciemmona in Bari Southern Italy this year fantastic event (which happens every year) and great area for cycling and food.
