Yes. You can ride cobbles in training but to get the full experience doing them in a race will properly prepare you for them.

In Van Baarle's defence, Kwiato does shit all to close either, then gestures to him to pull, Van Baarle tells him where to go, and in those 3/4 seconds, Wallays is already well gone and then neither of them is going to work to pull it back and get outsprinted by 1 or 2 others.

The overhead shot shows that Kwiatkowski does at least accelerate before gesturing.
But it was so textbook by Wallays that one of them should have been on him like a shot.
Added: Van Baarle clearly hasn't read the textbook though, as he said he wasn't expecting Wallays attack.

Purito is said to be 57kg and the same height I think. I can't think of many people lighter.
Cavendish is only a couple of inches taller and is 70kg.
I'm going to stick with 58kg being scrawny as heck.
