Been tempted by locks like Hiplocks Z locks in the past, but was rather put off them when I saved some touring cyclists with my Multitool who'd accidentally broken the key at the start of their tour

Currently using the LiteLok Go U shape in the Balkans. Its just for nipping into shops for food and even then I am sprinting around the shop like a loon as i hate leaving my bike oit of my site, its very nickable. The lock is around 400g I think? Can't grumble at that.
So far I've only had some Sutros stolen. Winning.

I rarely locked my bike during ultras. Most of Eastern Europe don't want a bike, "there's cars man" and it seems more likely to go in France, Germany or Switzerland. By then I'm typically wishing someone would steal it.

Most lightweight locks can be cut in seconds. You're only locking your bike up so some scrote might not be able to ride off on it while you take a straining shit in a service station after eating nothing but 7 Day crossaints for 5 days.

Abus bordo Lite 6055. Seems a bit burlier than many and although heavier than something super light does pack down very small.

When I toured I had an old, large Krypto D-Lock and a Krypto cable for the front wheel that now lives with some tyres...
I was using larger, public campsites and leaving my bike unattended all day/night in places though. If you were wild camping and only visiting towns for food, not spending time in museums, etc. then I'd go lighter. Also, my front wheel back then was probably worth 20EU so I don't know why I was so bothered about it. I could've just put a security axle on it (if I'd known about them or they existed). With every man and his dog on carbon wheels with dynamo front hubs, locking the front wheel is probably a bit more important. Two smaller locks made of different stuff might be an idea - especially if you're traveling in pairs - one each and then lock both wheels and from to something solid.

Yes I have one of those. Used it maybe half the time (mostly out of town german supermarkets, nowhere with lots of people). Still have my bike. Considering all the other crap I've brought it's not taking up much weight or space.

Any thoughts on my 2 options for over rear wheel packing.
I can get everything in using either option (there’s a bit of spare room on option 2)…
Option 1 - Revelate saddle bag. Have a photo of this below.
Option 2 - lightweight rack with dry-bag fixed to the top.
I don’t want to use rear panniers as it’s a short trip but I have one longer section (100k) to complete in one hit and want to retain some aero.

yeah if you have rack mounts why bother with dangle bag? They are the worst.
Also fork dry bag ID? I hve same cages but my dry bags are shit, need something that fits well.
I have the Abus Combiflex. Lightweight. Obvs anything more than a fierce tug would probably give the bike up but fine for opportunists on ferries etc.
