Cycled around the Japanese alpes for 10 days last year, very cold but no clouds. Sleeping bag was also not up to the -12deg! I feel cold is OK, wet on the other hand...

I'd rather do a combo of Panniers and bikepacking bags.. It worked for us in the past.

Yes. Done some 2 to 4 days things in the past.
Fun is a function of weather in winter, as many other said. But it's also generally quieter. I guess camping in winter is the harder part of it imho.
Both for the temperatures and wetness, but also because of the additional gear to carry. -

yep. big fan of randonee shorts and trousers. trousers less for riding but more chucking in a bag as they pack down small and are perfect for evenings or mornings.

Awesome thanks, found bibs for touring are a bit annoying but obviously want the paddage. Being marginally smaller when packed down is a good point. Ta!

I've taken to riding in padded undershorts (from Decathlon and Polaris, both seem fine), and wearing baggies over the top (usually lightweight MTB ones).

I've been wearing chino shorts (cut down trousers once they get too knackered) and found that works well too, only downside is they wear out on the arse eventually. Will check out Decathlon and Polaris.

It'll be warmer than an average English summer, you won't need much stuff with you.

Yeah I mean I need nothing. Just want to make it a nice experience for my wife (first trip), so we have many more.

In that case it might not be the best destination for scoring a "good first experience".. Car drivers from that part of Italy are not popular for their politeness and kindness towards cyclists.
Also, May 1st is Labor day in Italy and the weekend before it's Easter, so it'll be busy.
Just saying, my fiance loved touring in Luxembourg, but changed her mind after touring in Bosnia.

Did your girlfriend start riding a bike with you or did she already ride before?
Yes it does, it’s a special axle that comes with the trailer. Not sure how to budge that, but two rear panniers could make up for the trailer... but is that much stuff really necessary?
If she can have tent and sleeping equipment. You should be able to fit the rest into two large panniers. Front or rear.
