Just use a gear you can control with your legs.
To high a gear and you'll struggle to slow it down by resisting. -

Lower the gear and you will struggle less.
If you also control the speed with you legs before they spin to fast you should manage to stay in control better. :) -

amazing espresso on at the moment, nicely kitted out with a la marzocco machine and grinder, then a second mazzer grinder. Coffee roasted in belgium too i believe.

Ah i was in around lunch too, must have just missed you. Both of the current espressos he has running pack a real punch, proper sweet. Not my usual thing but i enjoyed them both.
