Brilliant thread by the way- something which I'd thought about before, glad to see I'm not the only one!
How come no one has mentioned a tandem? Is it down to maintenance?
Half the battle of post apocalypse would be in your own head, if you had company it would make things much, much easier.
2 people to cook, fight off anyone and power the bicycle.
2 people to maintain the bicycle and due to the tandem size you'd have a lot more space for spares. -

2 people to re-populate the country.

Exactly.
Of course my number two would be Mrs. Spenceey, she's a much better cook than me!

Tandem is not a bad idea, as ideally you would want a navigator to operate the Anti-Zombie Defence system.

Move the seats into the middle facing out, stick a shell around it and mount your anti-zombie weapons on the sides.

Well here the site that urbanvelo linked to..

Interesting take on post apo bikes and brakes..
"You don’t NEED brakes. You ride a bike to go, not stop. If you really need to stop, you can honestly just put your feet down in an emergency, or in most survival scenario cases you really may not need to be stopping at every damn stop light. Never plan to put hydraulic disk brakes on a survival rig. Too technical. Rim brakes are fine, but they do over long periods of time, actually remove the sidewall of the rim, eventually destroying you wheel even if nothing else is wrong with them, but it does take a while. If you’re breaking in sandy conditions, less time is needed. Common sense stuff."

^Should go on the fishy bikes thread
After being used to pneumatic tyres, that's going to be uncomfortable as fuck.
Maybe airless tyres would work, but even so, those where your mechanical skill would come in handy.
