I have just found some track drops, they're white tokyo fixed ones but most of the paint is scratched off, they'd be ok if you taped them fully though. Yours if you want 'em.

rear spacing is 120.. not sure what my options are

You can do modern track / fixeh, or 5 speed / ultra 6 I think.

If you go with that saddle I have some used charge bar tape in the same colour, it's old but still useable.

was thinking one brake on the langster (but 2 levers), and porteur bars with a 1x5 chainset on the peugeot

Sounds good, have you sorted bars yet?
If not I probably have a suitable pair because my old bike was killed so I have a fair few quill and 25.4mm parts lying about.
