Two Canyons & a Giant. Canyons both have Shimano Ultegra and Giant is Sram. Use SPD-SL and would really prefer not to change those...

Power2max on rotor3d (not plus/30) will fit pretty much anything and can be swapped over in a few minutes.

No, Canyon that gets the most use is disc brakes.

So:
No Hub based because rim & disc
No pedal based because of SPD-SL
No crankarm or spider/chainring based because of hollow tech vs GXP or BB30Vectors(pedal based) are probably the easiest, with crank related power meters possible with matching Chainsets and BB standards.

With Vector 2 you could buy new axles and run them with Ultegra bodies.

Good though, I have two sets. Switching between bikes is a bit of a PITA though and requires a torque wrench to do properly, and a Garmin head unit.

Allen keys not sufficient? Have always been fine for me to get pedals on and off. Or is it something to do with the accuracy?

V3 vectors are easy to put on, v2s not so much.
When I was using Shimano/look, I didn’t really feel any difference, but now I am on Speedplay, pedal power meters are out for me. -

How hard to get Ultegra/105 on the Giant? If they are then all the same chainset/crank length you could get a 4iiii, the 105 version was on sale for £260 at Sigma this week.
