A 3/32" ss chain would make more sense. Most better ss cogs and rings are 3/32 should you upgrade to them later.

I though 1/8 on 3/32 cogs shouldn't be an issue and figured the stainless steel would be good to have on a cross bike.

Just extra weight and looser fitting, but it will work. No chains corrode before they wear out so stainless is only going to help if you don't intend to wash/lube your bike after races.

It shouldn't be, but you do get some annoying creaking sound from the 1/8 chains moving about on the skinny cog/chainring.

Never had a rusty chain, come to think of it. Which of these would be my best bet? Z510 should be fine, or would a 10-speed be better?

Planet-X doesn't seem to stock the Alfine and I don't want to order at Rose because I don't like their stupid catalogues. How does this look for a crankset?

got 1/8 on 3/32 and I think that might be the reason i've dropped the chain a couple of times. Thats an issue as well.

I don't think 10sp will work on many nice cogs. 8 or 9sp will.

The Doofer. Not a particularly good tensioner and certainly no guarantee of keeping your chain.
Not all tensioner setups are born equal.
...you really want all of the following;
Chainline
Chain-tension
Spring-tension
Chain-wrap
Tall tooth cogs and rings -
