So just in time, Velo Orange announced a new stem.
The only problem is that it's a 90 degrees stem which will look odd if you wish to mimick a classic look.
31.8mm clamp with removable face, I reckon it'll look good when slammed.
Will order a 110mm one in black once it's out (no 120mm, boo).

Do I need to be looking for a particular bottom bracket standard/type so I can run a Shimano threaded BB with an old frame as opposed to, say, square taper?

You mean run the external bottom bracket? Your question a little vague.
As long it's BSA or Italian, just get it chased and faced, and buy correct BB for it.

TT is 56cm, ST is 58 (c-t-t), it's exactly the same size as my Carrera if the seat tube is also 73 degrees.
Pump pegs is lovely, previous owner got it custom painted by Batavus because he didn't like their offering.
Got a nitto quill stem for this, a black seat post unfortunately because Thomson don't make in-line in silver (27mm).

There's an exact same one owned by the mechanic in the London Cycle Workshop.
Carbon spacer work well, I think I'm gonna look into replacing the steerer but rather not damage the paint.
The best example of how I want my bike to look is this perfect example with a nicely slammed stem on Instagram;
