Is that the Fizik double layer (or something) tape Apolloxl? Whats it like, uber fat marshmellow?
I use it on my bullhorns and really like it. It's not that fat but definitely cushier than regular Fizik (but a slap in the face is softer than regular Fizik). Really nice texture and almost looks like leather. Nice tape, if a pain to wrap.

^ Lol! I've got Fizik microtex soft touch tape on all my bars save one, I tried the Cinelli cork tape, but the next time I taped I went straight back to the microtex.
Tried the Fizik gel pads too, but they were horrible, probably great for touring, but not for me. -

Yeah, I like normal Fizik but for riding around town it's nice not to have to throw gloves on and I found I needed them with Fizik. The dual is just soft enough that I don't need them. I hate squishy cork tape though.

i've given up using bars now, i just use mind control.
also re: that stem. XH was using the same one on his bike with this groupset and it looked great.

Apollo, I don't know what those bars are, but you really want Ergo bars for Ergo levers. Older bars will never get the hoods transition flat while keeping the lever reach correct.
I use Deda Newton bars which suit 90's Ergos and are also light. I'd avoid fanning around with shunning clamps if you can.
I'm sure you know why stem length you want already, but a very vague guess is something like 120mm judging by the frame size which is what made me think the one shown earlier looked awfully short.

Bonts would work better, are you going for the VR or the compact VR-C version?
On the stem choice, to be honest, I think the cleaner and slightly chunkier looks of the Cinelli look much nicer than the Nitto.
With the old school simplicity of your frame, I think that trying to keep your lines as smooth as possible, giving a simple but elegant build, would look superb!

I prefer the classic shape of the Cinelli stem. Also aren't some of the other components milky rather than shiny? (Headset? What about the seat post?)
Just for an idea on old school bars with modern shifters (I know it's SRAM but...) here's my 1A/Campione del Mondo set-up. [edit... with "milky" Stronglight headset!]
