Well the marathon supremes seem to be getting the most support so far, bit pricey though!
So beaded vs folded? I'd prefer easy on/off for if I do puncture along the route which means folded right?

err, in which way please? I currently have the stock Mavic CXP 22. Evans/wiggle have the tyre for the same price for either mode...

Some rims make it harder to fit tyres whether other are fine, says a touring rims like the Mavic A319 is fairly straightforward but the Open Pro is a little bit of a bitch.
Go for folding if price's the same.

If your touring is going to be on decent surfaces, have a look at Marathon Supremes.
Much nicer to ride than a M+, more supple and a good bit lighter, less rotating mass and better for fixed. More than durable enough for your planned ride. As above, you'd be ok on "normal" road tyres anyway.
I have 35s on my Surly Trucker - but to be honest I only got those as a sort of reaction to years of not having a bike that could take a big tyre. When I need to replace them I'll get 32s for a little less rolling resistance - but that's assuming riding mostly on Tarmac.
