You could line a bowl with a floured tea towel but a basket definitely helps and they're pretty cheap.

Overnight you just mix everything together and leave in something airtight (that's where I use a tuppaware as it isn't shaped at this stage). When proving after you've shaped you can just cover with a cloth or similar. I use a shower cap as it fits over the top of my baskets perfectly.

Quick 10hr sourdough whilst getting on with other jobs yesterday, added a bit more water than I usually would and got the best crumb in while. Not the best flavor though.
Have switched back to no knead after just combining with the mixer and getting much better results. Just have to not forget it's proving on the side.

Cheers. Proofing basket a necessity or could you just whack it a mixing bowl and cover?
