my red rossin has white tape - it is quite old (early 90's) and lower in the range than the pista though - and yes it needs a rear tyre. given to me by a work colleague.
can't find much history on it though

I suppose it comes down to personal preference and admittedly a lot of the Rossin's from this era are shown in their catalogue with white tape, saying that a lot are shown with a 2 colour fade bar tape. Think i'd steer away from brown but hey it's your bike. Looks great so far.

I'm thinking white cotton bar tape and shellacking it to make it look like it is on this picture.

The specs on pic 7 is also incorrect. It says Italia Mod Turbo but I think it's a Cinelli Unicantor Rilsan. Eroica Cicli has a NOS one for £235.

I now need a Regina Oro 1/8 chain, a 16t Campy cog (pita to find, will probably go with a DA), a Cinelli Unicanitor saddle and super record seatpost (might buy it from unicanitor if funds are there and he hasn't sold it)

What year did Cinelli stop with the classic text only on the back of the saddle?

Your's is Model #2 that text coincided with 'Unicanitor' on the side panels in the case of yours in silver also, the SL had the different cradle arrangement like the later Unicanitors (incl Rilsan) which dropped the side text in favour of the flying C on the nose and later logo on the rear.
I have a brown suede Unicanitor but the condition is a way off NOS.

So what would be more fitting, a flying c type saddle or the other one? The frame is from the mid to late 80's. I also thought the suede uni's in brown would smooth out after being used alot, getting a glossy effect?

I'd go with whatever you like best, everything looks sweet so far. The later logo version was introduced in the 80's, i believe it features in their 1981 brochure but i'd need to check. So technically period correct but i don't think it matters. The later version is a bit ugly IMHO, too padded.
3ttt Criterium or a perforated assos might be worth a look, assos is pretty hard to find but really nice quality and would tie in with the colours - black w/white logos.

I'm wondering if that frame is the same year as the one Crows and Dutch owns only in another color?
Anyone good in the history of Rossins? The bridge and forks are the same. I need the exact making year.

Saw your wanted thread on some Ofmega Pista hubs (which I have).
Glad it got sorted.
The reason to why there's no Gipiemme seatpost is because I don't like the look of them, plain and simple. ;)
