I'm thinking either....
3x decent (old DA or campy Rec-C) stainless cable clips and route along top tube, cable outer ON TOP of top tube, as those clamp things will rip a hole in your nut sack if you turn them upside down. And just be mega finicky about cable housing length & curves, you can make it look good, but it takes trial & error & swearing in the shed.
OR
saw a picture of a rear brake caliper located on the chain stay bridge (in porn between all the bitching), with some finesse that could be made to look tidy & inconspicuous.

Actually I have thought about that! I have an Aero Gran Compe brake left over which is tiny, but it is still not tiny enough as the frame is extremely tight (see above).

these look good, but my frame is all chrome, so a black patch might be more visible than a silver ring (if it's thin, like in the first image)
For a chrome frame, I would recommend getting the clamps you mentioned in your OP and silver/white/clear cable outer.

Jetski your bike looks great, don't fuck it up.
If you have to have a back brake and a freewheel then build another rear wheel with a coaster brake hub- no second brake lever, cable, cable clips or brake caliper to worry about.

I already have a solution how I get around needing a hole in the seatstay bridge (which I would never ever drill), so the frame won't get fucked.
I just like to ride this bike so much I don't want to put it in a corner and build another one.
I think I will follow Brickmans advice and get some Dura Ace clamps and I'll be fine. And it will not look wrong as there are some DA parts on the bike anyway.

1+ on dammit - coaster brake.
or just go to Condor and pick up those cable guide, they're fine and it look rather classic looking, in fact it'll compliment your bike, you may only need two, but I would advised getting three.
(not the best example but it's the only one I can find in short notice).

alternatively, keep riding fixed.
it will take a while to get used to it, give it some wellies.
if after a couple months you still think you need to coast like a fattie, then stick a freewheel.
first sleeve, then nose, then bottom
