M5 is width of threaeded area, then you need to thing abot the type of thread ie course and fine.
knock a bigger torx bit in to the bolt, is what i do. I have a great experience of poor quality bolts.

i replaced the cap head bolts on my phils with some nice stainles bolts they now work a treat, the allen head fitting is very bad at high torque applications especially small sizes.

or get a large flathead bit for your ratchet set + an adaptor. -

Get a HSS drill bit slightly larger than the diameter of the screw shaft ad drill into it until the head comes off. Pull the wheel out and take the rest of the screw out with a pair of pliars.
