This method is also otter friendly. If otters are prevalent in your local waterway, there is a chance of them getting caught in conventional crayfish traps.

Oh, and if you keep your crayfish in a bucket of river water for over 24 hours I shouldn't worry too muck about removing the 'vein' down the back - they will be 'purged' by then. Longer than 36 hours and the crayfish start to die.

I made a rhubarb chilli and ginger marmalade last year.
