I actually have an amazing book a friend bought me last year Muffin Magic---> Muffin Magic: Irresistible Recipes for Individual Treats: Amazon.co.uk: Susannah Blake: Books

Some of them I just make up (like the fabled Turkey-bacon and cheese one) or convert from cake recipes. Anything you can bake in cake form you can bake in a muffin, just don't overmix the wet and dry ingredients
