  • yeah saw that article in the Grauniad,
    just troughed another fabulous parasol omlette for tea.

    been talking to Polish house mates about the shrooms, apparently the season over there is going OFF! more than they can eat, as its really popular the markets have a kilo of chanterelles for 10 Zlotys, (about £2.50) sounds ace,

    whilst Im here mushroom lovers I got a couple of receeps for yas,
    sorry if theres any OCDs about, I dont measure shit, just do it by feel,

    First up is a rich autumnal stew, this one leaves ya feeling Irie!
    *Master Forester mushrooms.

    you need:-
    About a kilo of mixed mushrooms, all your faves.
    A large white onion.
    Butter.
    A bottle of red vino.
    A bag of dark muscavado sugar.
    A jar of french coarse grain mustard.
    A big bunch of coriander.
    Salt & plenty Black pepper.

    First--
    chop all the mushies into manageable pieces, chop the onion finely,
    Melty a big swadge of butter in a large heavy bottom pan (you know the orange ones Grauniad readers)
    Soften the onion well,
    add the mushrooms and stir until they soften and you can get them all in,

    meanwhile, with a huge glass of the wine (drink one at same time) mix up in a bowl, about third a bag of sugar, lots of ground pepper, the mustard, make a real smooth paste.

    when the shrooms are reduced enough, add the paste to the pan, stir well and simmer for about half an hour. Towards the end of the cooking add the fresh chopped coriander, save a bit of the coriander to garnish and serve with ya white rice, good bread or whatever you want.

    This one works best with Ink Caps.

    You need:-
    about a kilo of inkcaps, or whatever ya got that day.
    Butter.
    White onion.
    Glass of white wine.
    Coriander seeds.
    Salt & Pepper.
    Large carton of fresh single cream.
    Tagliatelle or similar (fresh if youre from west London)

    First,
    chop all ya mushies up (clean em first did I say that already?)
    Chop the onion finely.
    Boil a large pan of water.

    Melt a large swadge of butter in you guessed it an orange pan (normal if your from south London)
    Melt the onion,
    bang in a table spoon of ground up coriander seeds (pestle thing,bike powered blender?)
    when thats cooked a min, put in the mushrooms,
    when they have made a good mushroomy mass, add the wine and turn the heat up,
    cook until most of the wine has evaporated,
    then add the cream,
    cook briefly and serve over hot pasta from the pan
    (you should know how to cook pasta unless youre a fucking student)

  • Alarm set for 4:30 am for an all day foraging trip tomorrow - You know, it's when you make an effort like that, that no mushrooms appear at all so wish me luck! I also heard that there are plenty about, so I'm hoping it's not just hearsay.

    Oyster mushroom,
    Red cracked Bolete,
    Giant puffball (bigger than my own head),
    Fairy ring Champignon,
    Parasol mushroom,
    Field, horse and macro mushrooms
    some kind of milkcap (didn't eat it as couldn't identitfy)

  • good day out again, lots of finds, wont bother with agaric pics, all seen them millions of times, quite a few slippery jacks, few boletes (poor condition)
    wasnt sure about this, slightly orange staining,

    Missed this earlier: looks like a saffron milkcap. Hollow-stemmed, one of the russulas. Good to eat.
