It's mainly questioning the necessity of needing the spring.
Go for a standard B17 and see how that suit you.
I know, but I'm secondarily trying to work out if the 'special' models are just aesthetically nicer or if copper plating stuff makes it more robust. pretty sure i'll go unsprung anyway.

Nothing, but only 650B and 700 were mentioned, and my preference was based on visuals and availability, not function.

700x35 is heavier than 650bx35, of which mean less toe overlap, even with mudguard.
With the size of frame required, I still say 700 would look better and components would be easily found.
Overlap can vary, but it's mostly not a problem unless you do a lot of slow speed slalom. -

...and they're a bit nicer. I'm sure there's a host of blurb from brooks.
I'm not sure it's worth the extra anyway, but until you've tried it it probably even less worth it. But then IMO saddles are best bought second hand until you're sure you like the shape.
If you're buying from mosquito then you're probably not a million miles from me. So if you want you can borrow my B17 narrow to see how you get on. Even the narrow is wider than your average saddle.

flat MKS rivendell style pedals, or the recent MKS Urban;
Would recommended the latter, the massive lips make extraordinary light work of flipping the pedals round.
Was very very happy with my (otherwise expensive) White Industries Urban pedals, the MKS one should just be as good.
They look great, pretty much a copy of the White Industries by the look of it. Though the ones in the your photo are the more expensive EZY pedals with the quick realise on the spindle, i think they're about £80, the non-EZY ones are about half that price.

They look great, pretty much a copy of the White Industries by the look of it...
And White Industries is a copy of the Lyotard M23 'Marcel Berthet' pedals;
It's an old design that for some reason wasn't popular, the Loytard one were weak as the lips are prone to snapping off.
The Lyotard have an extra lips on the pedals design to grip with specific cycling shoes, which work pretty well, clubman on here ride with them.

If only there was some kind of bicycle designed for pootling about on and doing the shopping, then we could all stop attaching racks to ones that are designed for flat-out racing. One day.
