You can probably get away with 60mm/2.35".
And the easiest 1x setup is sram. I'm running x7.2 RD and gx 10-speed shifter on one of my bikes. Totally painless to setup.
Be sure to get a NW-chainring though or get ready to but your chain back on all the time. -

Could I run this with a single bar end shifter?
Also any recommendation for a crank / NW ring. SRAM is totally new to me.

I've seen people do it with sram bar-ends. At least the 10-speed ones should work with 10-speed mtb rear deraileurs.
Crank/NW depends on you budget and what size chainring you want and if you care about q-factor. I have friends who run both Sram's own chainrings and AbsoluteBlack ones, so I feel comfortable recommending either of those. -

I'm not too fussed about Q factor, in terms of gearing in would like a reasonable low range for loaded riding. Something like 34-34 as the lowest gear would be good I reckon.

I'd go for a single ring mtb crank then. Sram NX comes with a 32 tooth NW ring.

yep, I was actually using it with Rival 10 shifters but will also work with sram bar end TT shifters

No it's not. 2×10 is Exact Actuation. It says so in the picture. I was confused by this for a while but they have different pull ratios for the 2×10 and 1×11 derailleurs despite being the same "groupset".
@mi7rennie I have SRAM GX 2×10 working with 11-36 no problem. See picture. Using TT500 bar end.
What about a shimano 10 speed bar end..... in friction mode.
Because the SRAM pull ratio is much lower a Shimano friction shifter may not pull enough cable to work with SRAM derailleur. Off the top of my head SRAM 10 speed needs about 30mm of cable pull whereas Shimano only needs 25mm. So the shifter might top/bottom out before you shift through the whole cassette. However I've done friction shifter and Exact Actuation derailleur and it worked in my case. It depends on the specific shifter.
If you already have the Shimano friction shifter you might as well try it. If it doesn't work you'll need to buy a TT500 rear (~£25 on eBay) or bodge a flat bar shifter on.
You could also go with a 9-speed Shimano MTB derailleur which will work fine with 7/8/9/10 speed Shimano bar ends, indexed or friction. Should be able to find one that clears 11-36.

The world of SRAM is exciting and confusing.
Yeah, it’s 1x (after a lot of tears and boiling, long story). Get a dynamo or don’t bother, and yes the aforementioned knobbly tyres.
